- 1 tablespoon olive oil
- 2 large onions, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups chicken broth
- 1 cup orzo pasta
- 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup milk
- 1/2 cup shredded Gruyere cheese
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped, for garnish
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- Heat olive oil in a large skillet over medium heat. Add onions and cook, stirring occasionally, until caramelized and golden brown, about 20-25 minutes. Add garlic, thyme, salt, and pepper; cook for 1 minute more. Remove from skillet and set aside.
- In the same skillet, bring chicken broth to a boil. Add orzo and cook according to package directions, about 8-10 minutes, until al dente. Drain any excess broth.
- While orzo is cooking, melt butter in a separate saucepan over medium heat. Whisk in flour and cook for 1 minute. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly, until sauce thickens slightly, about 2-3 minutes. Stir in Gruyere and Parmesan cheese until melted.
- Add chicken and caramelized onions to the orzo. Pour cheese sauce over the mixture and stir to combine. Transfer to the prepared baking dish.
- Bake for 20-25 minutes, or until bubbly and golden brown.
- Garnish with fresh parsley before serving.
Notes
For a richer flavor, use bone-in chicken thighs. You can substitute provolone or Swiss cheese for Gruyere. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
