  • 1 tablespoon olive oil
  • 2 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups chicken broth
  • 1 cup orzo pasta
  • 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1/2 cup shredded Gruyere cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add onions and cook, stirring occasionally, until caramelized and golden brown, about 20-25 minutes. Add garlic, thyme, salt, and pepper; cook for 1 minute more. Remove from skillet and set aside.
  3. In the same skillet, bring chicken broth to a boil. Add orzo and cook according to package directions, about 8-10 minutes, until al dente. Drain any excess broth.
  4. While orzo is cooking, melt butter in a separate saucepan over medium heat. Whisk in flour and cook for 1 minute. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly, until sauce thickens slightly, about 2-3 minutes. Stir in Gruyere and Parmesan cheese until melted.
  5. Add chicken and caramelized onions to the orzo. Pour cheese sauce over the mixture and stir to combine. Transfer to the prepared baking dish.
  6. Bake for 20-25 minutes, or until bubbly and golden brown.
  7. Garnish with fresh parsley before serving.

Notes

For a richer flavor, use bone-in chicken thighs. You can substitute provolone or Swiss cheese for Gruyere. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
