  • Total Time: 40 minutes
  • Yield: 6 servings 1x

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 large head of broccoli, cut into florets
  • 1/2 cup heavy cream
  • 4 oz cream cheese, softened
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup butter
  • 2 cloves garlic, minced
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a large skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Be careful not to burn the garlic.
  3. Add chicken to the skillet and cook until browned and cooked through. Season with garlic powder, onion powder, salt, and pepper.
  4. Add broccoli florets to the skillet and cook for about 5 minutes, until slightly tender-crisp.
  5. Stir in heavy cream and cream cheese until melted and smooth. Reduce heat to low and simmer for 2-3 minutes, stirring constantly.
  6. Remove from heat and stir in Parmesan cheese until melted and well combined. Taste and adjust seasonings as needed.
  7. Pour the chicken and broccoli mixture into the prepared baking dish. Sprinkle with mozzarella cheese.
  8. Bake for 15-20 minutes, or until the cheese is melted and bubbly and lightly golden brown.
  9. Let stand for 5 minutes before serving. Garnish with fresh parsley, if desired. Enjoy your Keto Chicken Alfredo Broccoli Bake!

Notes

For a thicker sauce, add a tablespoon of cream cheese at a time until desired consistency is reached. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave. You can substitute the broccoli with cauliflower or asparagus. For an extra cheesy bake, add some cheddar cheese on top.
