Ingredients

  • 1.5 lbs ground turkey
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, drained
  • 1/2 cup sugar-free ketchup
  • 2 tablespoons yellow mustard
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 6 slices cooked turkey turkey turkey bacon, crumbled

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a large skillet, brown ground turkey over medium-high heat. Drain off any excess grease.
  3. Add the chopped onion and green bell pepper to the skillet and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  4. Stir in the drained diced tomatoes, sugar-free ketchup, yellow mustard, smoked paprika, garlic powder, and black pepper. Simmer for 5 minutes, allowing the flavors to meld.
  5. In a separate bowl, beat together the softened cream cheese and sour cream until smooth. Fold in 1 cup of the cheddar cheese and 1/2 cup of the mozzarella cheese.
  6. Spread the cream cheese mixture evenly over the bottom of the prepared baking dish.
  7. Pour the turkey mixture over the cream cheese layer. Sprinkle with the remaining cheddar and mozzarella cheese.
  8. Bake for 25-30 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.
  9. Remove from oven and sprinkle with crumbled turkey turkey turkey bacon. Let stand for 5-10 minutes before serving.

Notes

For added flavor, try adding a dash of hot sauce to the turkey mixture. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave. You can substitute ground beef or chicken for ground turkey. For a spicier kick, add some chopped jalapeños to the turkey mixture.
